My son and I have both been sick for weeks and I really wanted some soup. This recipe hit the spot! It’s packed full of healthy and nourishing ingredients like ginger, garlic, and bone broth.
It is so creamy but without the milk or heavy cream, not only that, it’s Paleo and Whole 30 compliant. We ate this for dinner but it would be great as a starter if you are hosting a dinner party.
The spices are so warming and soothing, if you are a fan of curry, you will love this soup. I topped mine with cilantro and pomegranate seeds which added a nice little pop of freshness. To do the design, I used some leftover coconut milk and put it in a squeeze bottle. I then put a drops all over the top and used the back of my spoon to swirl it through. It makes a nice presentation.
