My husband works a flex schedule which means that he gets every other Friday off of work. I love getting this time with him so much, because we don’t get to see each other very often during the week. I knew he would love this breakfast, so I made it when we could enjoy it together. I am happy to say that it is husband approved 🙂 I grew up in Arizona so I love the punch of flavor that chorizo brings to a dish.
This meal is easy to make and can even be made in advance, just leave the eggs out and serve a fried one on top when you reheat it. To pump up the southwestern flavor, you could serve it with some fresh pico de gallo, avocado or some cilantro.
For those of you doing a round of Whole 30, be sure to check your labels as most of them contain added sugars. Pederson’s Farms has a wonderful compliant chorizo, but I actually found the one I used for this recipe at Sam’s Club! I was so excited and it was a great price, which is always a bonus.
