These cookie dough bites are little pillows of heaven that will satisfy those cookie dough cravings! They are made with a few simple quality ingredients that melt in your mouth. I love how easy they come together for that perfect little bite.
The truth is, cookie dough has a special place in my heart. When I was 17, I worked at a card store that was right next to a pizza place. This pizza place happened to have cookie dough that you could eat raw. I would go buy this cookie dough often, but it was really so I could see the cute boy that I had a major crush on (and because it was delicious). Anyway, long story short, that cute boy is now my handsome husband and now we eat these cookie dough bites instead 🙂
As you can see in the pictures these balls are nice and soft (hehe) but seriously, I did this on purpose because I wanted the texture to be like cookie dough. You can always add a little more almond flour if you like your balls a little more on the firm side. (I swear these sentences are not meant to be inappropriate) To store them, I like to use a silicone bag or glass container and keep them in the fridge.

Paleo No-Bake Cookie Dough Bites - GF
- 1/2 cup Almond Flour
- 1/3 cup Cashew Butter
- 1 Tbls Chia Seeds
- 1 Tbls Hemp Hearts
- 2 Tbls Honey
- 1/4 cup Chocolate Chips
- In a large bowl, mix the cashew butter and honey together until nice and creamy. Then add inn the rest of the ingredients and stir until fully combined. Let dough chill in the fridge for 20-30 minutes
- After dough is chilled use a Tbls scoop of dough for each ball. Roll into balls and store in the fridge.
