Chinese Chopped Chicken Salad

I love a fresh and light salad, even in the winter. It is such a great option for work lunches. This Chinese Chopped Chicken Salad is a great way to change up your typical boring salad. The cabbage is hearty and makes this a great meal prep option. The flavor gets even better after a day or two!

I love a salad that has lots of flavor and different textures. I used romaine lettuce along with the cabbage when I first made this, but since romaine is deadly at the moment lol, you can use whatever lettuce you like. PS there are a lot of local farms that are producing perfectly clean and healthy romaine 😉 There are also so many ways that you can save time making this recipe. You can buy a rotisserie chicken and shred that up or buy a bag of pre-shredded cabbage and carrots. It is also really easy to shred carrots at home using a food processor.

I used canned mandarin oranges and water chestnuts, but as always when doing a Whole 30, check your labels. Make sure to keep an eye out for sneaky added sugars. For the cashews, I used roasted and salted because I love that crunchy, salty bite. You can use raw too, or even switch it up and use sliced almonds.

*Money Saving Tip – Buy raw nuts in bulk and roast and salt them yourself!

The dressing for this salad is super easy and full of flavor. If you aren’t familiar with coconut aminos, I like to think of it as a soy sauce replacement. It doesn’t have quite the same taste, but it really adds that savory flavor that you need to balance out the acidity of the dressing. Most importantly, it is Whole 30 compliant. I actually use it in all kinds of recipes to get that added depth of flavor.

This Chinese Chopped Chicken Salad is a healthy and vibrant dish to change up your boring work lunch. Keep it fresh and light with this beautiful salad.

Ingredients

Salad

  • 2 cups Shredded Chicken
  • 1 cup Lettuce chopped
  • 1 14.5 oz Can of Mandarin Oranges drained
  • 1 can Water Chestnuts drained
  • 1/2 cup Carrot shredded
  • 1 cup Purple Cabbage Shredded
  • 1/2 cup Cashews chopped
  • 1/4 cup Cilantro chopped
  • 1 Tbls Sesame Seeds

Dressing

  • 1/4 cup Coconut Aminos
  • 1/4 cup Rice Wine Vinegar
  • 2 Tbls Olive Oil
  • 1/4 tsp Ground Ginger
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

  • Add all of the salad ingredients into a large bowl and set aside
  • Put the dressing ingredients into a mason jar and secure lid. Shake until well combined and pour over the salad. Toss to combine and enjoy! 
  • *You can also mix the dressing ingredients in a bowl with a whisk if you don't have a mason jar 
  • Store covered in the fridge
